Throw a veggie party, without your guests noticing

Soooo I did something a bit sneaky for the 4th of July drinks I had at home. My 12 guests were duped as I only served vegetable dishes at the party, no fish, no meat.  It was not vegan as I did use cheese and yogurt. I used a lot of fresh herbs and seasonal (of course) vegetables…and nobody noticed except my vegetarian friend, who was over the moon when he saw the food.

It was easier than I thought and because it was a casual summer garden party it worked well. I always serve lots of veg so everyone is used to that but this was a success. So give it a whirl and see what your friends say…

this is what I served:

Guacamole with nachos

Eggplant caviar with crackers

Oven baked chickpeas with raz-el hanout spices

Home Made popcorn with cinnamon and sea salt

Vegetable platter with cottage cheese dip with fresh herbs

Baked corn on the cob with Parmesan cheese dusting

Filo pastry stuffed with spinach, feta, mint and parsley with a vinaigrette dip (blend feta, spinach, mint and parsley with seasoning to a paste and stuff the cut to size filo. Bake in oven and serve warm)

Spaghetti with diced yellow courgette and heirloom tomatoes and basil pesto

as it was 4th of July party I did serve some pretzels and pringles 🙂
