Belgian weather is in a way very predictable; you know one day it’s sunny and hot, the next it’s grey and rainy… there is comfort in that, I guess… and a few rainy days at the beach make me crave summer comfort food.
I love lounging in bed with foodie magazines (always researching) and shutting out the world and totally unplug … till I have a blog idea and need to hit pinterest 🙂
This is when my stomach starts rumbling and to the rhythm of the rain drops on the window and sounds of the wind in the dunes, I cook up a lovely lunch to take back to bed …
So here is my grey shrimp and seaweed risotto and a very berry-trifle.
Grey shrimp and seaweed risotto
Need per person:
50gr risotto rice
1/1 diced shallot
5ml white wine
200ml chicken stock
30gr shaved parmesan
30gr grey shrimp, cleaned and cooked
5gr chopped flat parsley
olive oil, salt and pepper
- Glaze the shallot in olive oil but don’t colour, add the rice and white wine, keep stirring gently and add a ladle of stock allowing it evaporate each time before adding more. Keep a close eye on it as not to burn the rice.
- Once the rice is cooked, remove form heat, stir in a little more stock to keep it moist and add the parmesan and mix well. Season with salt (carefully as the cheese and seaweed are already salty) and pepper to taste and add the seaweed and shrimp, sprinkle the flat parsley to finish before serving.
Variety of berries such as blueberry, raspberry, red berry and brambles
Red fruit coulis
Granola or crushed biscuits
layer the granola, berries, coulis and cream in a glass. And Enjoy!
