I am lazy when it comes to baking as i LOVE just picking them up from a lovely little patisserie. But 2016, i put myself a challenge to bake something every month. Yeah yeah, i kindda missed January. I did bake the tartelette with pink chard (posted 25 Feb) and now a pear pie. and yes, true to myself, i bought the short crust but i made the filling!
I used a pie tin of 20cm but had a bit of filling left so use a larger one if you ‘ve.
50 gr room temperature butter
90 gr of caster sugar
1 vanilla pod seeds scrapped out
8 gr of vanilla sugar ( 1 sachet)
a pinch of salt
160 gr almond flour
3 pears, cored and peeled
1. Line the tin with crust and blind bake in preheated oven at 180 C for 15 minutes.
2. Beat the butter, sugar and vanilla sugar together, add the lightly beaten eggs, the vanilla seeds and salt.
3. Fold in the almond flour gently till smooth. Ladle the filling and pack it in, add the pears as you prefer either whole or sliced.
4. Bake for 40 minutes in preheated oven at 180 C.
when cooled just on its own or with some vanilla ice-cream or clotted cream.
