7 sun-kissed summer recipes to get you salivating now

21 june = summer time! I am exited for the long days and the (potential, I do live in Belgium) sunshine but most of all for the seasonal, summer produce in abundance! I can’t wait for fruits like peaches, figs and watermelon to get in season. I am anxious to taste sun ripe tomatoes, refreshing cucumber and succulent courgettes.

To get us all salivating and dreaming of what is to come soon, a few of my best summer dishes to inspire you:

My summer lobster and cockles linguine – link HERE  – as soon as the weather warms up lobsters become in season and prices drop slightly, so bring on july !

My figs and truffle cheese grilled sandwich – link HERE – figs come in season late summer, so early September is when they are at its best.

My 8 sun-kissed crostini – link HERE – I topped my crostini with peas, they get in season end of June and cucumber they get end of August.

My grilled peaches and cardamon, whiskey cream – link HERE – i can hardly wait for July when the peaches come to us from the Mediterranean region. Apricots and cherries are the first of the stone fruit to get in season in June but peaches take a little longer.

My heirloom tomato tart – link HERE – Tomatoes can start as early as July but August is really their season when the abundance is vast and all I do is eat tomatoes.

My corn on the cob with zingy topping – link HERE – End of August corn is ready to be enjoyed.

My oven-baked herb-crusted salmon and courgettes – link HERE – Courgettes get in season end of June.
